Energy Saving Mode

The fast has been going well thus far with just short periods where I can feel my energy levels dipping. I think my problem is that I had a high carb content meal last night and two helpings of dessert. Yes. Not good.

I have no energy so I thought let's blog about how much energy you don't have. Makes perfect sense.

All I can think of right now is food. Yoghurt chicken curry and naan bread all over my face. Drool*

A few nights ago we decided to have Kuaia for supper. I ordered a Moroccon bowl with cauliflower rice. I've been meaning to try this cauliflower rice for weeks, but I keep forgetting.

Look, it doesn't taste like rice, but it's not bad.

You can fork out R30 for 400g of it from Woolies or you can make it yourself.

I've always wanted to try this, but whenever I went to Woolies cauliflower rice was the last thing on my mind. I also thought that this was some special cauliflower... like the rice grew on a special tree in the Sahara. Okay fine, I am exaggerating. I just thought maybe they do something special to it. Well, truth be told, the only special thing you do is grate the florets. That’s it. The end. You can use a blender or a regular box grater.

\Cooking it is simple too. Heat a little olive oil in a skillet and cook for about five minutes. You could also saute some onions first (possibly add green pepper, chili, whatever you’re in the mood for) and then add the grated cauliflower for some added flavour. I guess you could create a stir-fry of sorts. Doesn't sound half bad.

Well, if you try this you should reward yourself with the THREE INGREDIENT BROWNIE

Ingredients:

  • 1 cup (280g) Nutella

  • 2 eggs

  • 10 tbsp (62g) flour

Directions:

  • Put it in a bowl. Mash it up. Pour into a pan or muffin tin. Top with hazelnuts if you're feeling extra fancy. Bake at 350F (180C) for around 30 minutes (less time for cupcake form, more time if the centers aren't baked through).

That's it. You're done. Eat them. Revel. Be amazed.

NOTE: I added some salt to the recipe and it tasted much better than without it. I would cook if for less than 30minutes as well. I served mine with marshmallows and almonds and ice-cream. I heated the dessert before adding the ice-cream. Delicious.
